Resetting in easy mode

Is it possible to reset (restart) the game in easy mode? Cannot figure out how to do that! Uninstalleed, reinstalled, etc. The game is too hard for me in normal mode (I know, I know...). Thanks

Every time you start a new run from the hangar, you can choose which difficulty level to play.

Thanks. Hate to be stupid but...I'm in the hangar, I see: ships-setup-perks-stats-codex. I have scoured the menus and submenus and can see nothing about changing anything to easy.
